Cherry Tigernut Muffins

Ingredients:

  • 5 medium-size eggs

  • ¾ cup Strp'd Tigernut Flour

  • ½ cup flax seed meal

  • ¼ cup honey or maple syrup

  • ¼ cup avocado oil

  • 1 tsp vanilla extract (optional)

  • ½ tsp baking soda

  • ½ tsp sea salt

  • 1 cup cherries

Method:

  1. Preheat oven to 180°C. Line a muffin pan with 6 liners.

  2. Blend wet ingredients: eggs, honey, avocado oil, and vanilla for 10 seconds.

  3. Sift dry ingredients: tigernut flour, flaxseed meal, baking soda, and sea salt.

  4. Mix dry ingredients with wet until combined. Stir in cherries.

  5. Fill muffin cups to the brim with batter.

  6. Bake for 20-25 minutes or until a toothpick comes out clean.
