Cherry Tigernut Muffins
Ingredients:
5 medium-size eggs
¾ cup Strp'd Tigernut Flour
½ cup flax seed meal
¼ cup honey or maple syrup
¼ cup avocado oil
1 tsp vanilla extract (optional)
½ tsp baking soda
½ tsp sea salt
1 cup cherries
Method:
Preheat oven to 180°C. Line a muffin pan with 6 liners.
Blend wet ingredients: eggs, honey, avocado oil, and vanilla for 10 seconds.
Sift dry ingredients: tigernut flour, flaxseed meal, baking soda, and sea salt.
Mix dry ingredients with wet until combined. Stir in cherries.
Fill muffin cups to the brim with batter.
Bake for 20-25 minutes or until a toothpick comes out clean.
